I love having muffins or a loaf around for snacking and this morning I found my table empty of delicious baked goods. I was also really hungry and unable to decide what type of treat to make for this week. The result was this recipe for what I am calling 'The Little Bit of Everything Muffin'. A little veg, a little fruit, some nuts, and even a little indulgent chocolate…though not much. Happy Baking!

Ingredients
- 1 egg (or flax egg)
- 1 cup whole wheat flour
- 2/3 cup rolled oats
- 1/2 cup plain yogurt
- 1/2 cup shredded and strained carrot
- 1/2 cup shredded and strained zucchini
- 1/3 cup honey
- 1/4 cup coconut oil
- 1/4 cup raisins
- 1/4 cup chopped almonds
- 2 tbsp mini dark chocolate chips
- 2 tsp ground cinnamon
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla
- 1/2 tsp salt
Directions
- Preheat oven to 350'F
- In a large bowl combine flour, oats, baking soda, baking powder, cinnamon and salt
- In a medium sized bowl combine eggs, yogurt, carrot, zucchini, honey, coconut oil, and vanilla. Mix well.
- Add wet ingredients to dry ingredients, stirring just until combined
- Fold in raisins, almonds, and chocolate chips
- Pour mixture into greased or lined muffin tin
- Bake for 18 minutes at 350'F
- Cool on wire rack for 10 minutes before serving
