When I don't have much time or don't really feel like cooking, pasta is a go-to for me. It can take very little effort and time to make a filling and tasty meal with it. Theres nothing wrong with a pasta night every now and then, however, I was doing it all wrong. I used to simply thaw some homemade tomato sauce and dump it onto my pasta, making pasta nights mean that not only I was being lazy but each time I could only expect tomato sauce. I decided to do myself a favour and create some new, but fast ways to make a pasta meal.

Ingredients
- 4 cups of uncooked penne pasta, enough for 2 large portions
- 1/2 green pepper thinly sliced
- 1/5 onion, thinly sliced
- 6-8 sun-dried tomatos, thinly sliced
- 1 1/2 tbsp capers
- 2 tsp Italian Seasoning
- salt and pepper
- olive oil
Directions
- Boil pasta until cooked, but still with a little bone left to it, al dente
- With 5 minutes left until the pasta is finished heat oil in a frying pan and begin to cook the green pepper and onion slices together
- Strain pasta and add to the frying pan with the pepper and onion
- Then add the sun-dried tomatoes, Italian seasoning and a pinch of salt and pepper
- Fry everything together until the pasta begin to by lightly fried, the outside will become slightly firmer but don't allow the pasta to brown or over cook
- Add capers and serve
