What to do when your freezer is filling up with browning bananas? Make banana bread! This recipe is slightly healthier than my previous recipe for Dark Chocolate Raspberry Banana Bread Muffins, though equally tasty. Whether you are looking for something for breakfast or a sweet snack, these muffins are perfect!

Ingredients
- 4 bananas, very ripe and mashed
- 2 large eggs
- 1 cup whole wheat flour
- 1 cup rolled oats
- 1 cup strawberries, fresh or frozen, cut into small pieces
- 1/2 cup dark chocolate chips
- 1/3 cup butter, room temperature
- 1/4 cup plain yogurt
- 1/4 cup brown sugar
- 1/4 cup honey
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 salt
Directions
- Preheat oven to 350'F
- Grease or line 2 muffin tins (will yield 18 muffins)
- In a large bowl cream together butter and sugar, about 3 minutes with a hand blender
- Add eggs one at a time, blending in between each addition
- Then mix in yogurt, vanilla, honey and mashed bananas
- In another bowl mix together flour, oats baking soda, cinnamon and salt
- Add dry ingredients to wet ingredients in 3 additions, mixing in between each
- Once all ingredients are blended well, fold in the strawberries and chocolate chips until evenly distributed. Be careful not to over mix
- Pour batter into muffin tins and bake for 30-40 minutes
- These muffins will still be moist when they are done because strawberries hold a lot of moisture. test batter with a toothpick but be aware if you test through a strawberry
- Allow to cool on a wire rack before serving
Notes
- The honey in this recipe will make the muffins a dark brown, bran-like colour, the muffins are not burning, just browning
- I don't always have plain yogurt available, however I always have vanilla yogurt on hand and found it works great in this recipe. If you are adding a flavoured yogurt you may want to reduce the sugar slightly and omit the vanilla extract as flavoured yogurts will already have a sweetener in them.
- If using frozen strawberries, cut them frozen and then let them thaw for 10 minutes on a paper towel. Also, make sure to only fold the batter as much as needed to mix them in so that they wouldn't turn the whole muffin pink.
